I bought a Fixer-upper. My first time changing ceilings. What do I do first? Do I use Dry wall, Ply-wood or ...?
and how do I cover the material after installation? do I use plaster or ...? Where can I obtain a Video on Ceiling installation or see it on-line using real time player or video viewers.

What type of ceiling are you replacing? Can it be repaired instead?
If you have to replace it after removal, use 1/2" sheetrock and drywall screws. If you have a lot of ceiling to do, I would rent a sheetrock hoist made for the purpose to raise and hold the sheetrock in place while installing. Otherwise, it is a two-person job.
Screw the sheetrock about every 8" to the ceiling joists.
Tape and mud the seams (3 coats). Sand in between. Prime and paint.
If you have never done this before, I think that you would be happier hiring a pro to do the sheetrock and finishing. Especially a ceiling. They can do it faster and better, and often cheaper than you can D-I-Y. (At least that's MY experience with an A-frame. LOL.)
Then you can handle the priming and painting, if you want it flat, or hire a pro painter to spray it with texture.
