Textured wall finishes

I would like to finish the walls in my home with a "skip texture" or "knock down" finish. Essentially what I am looking for is instructions on how to apply and trowel the mud on the walls. What is the proper consistency of mud for best results. Is it possible to roll the mud on the wall for faster application before troweling.T he finish that I am looking for resembles an old stucco finish with some areas smooth but also some relief areas as well. Any instructions or book references are appreciated. Thanks.
