Open up load bearing wall
The entrance to my kitchen has a 30 inch opening, a 10 inch "pole", than another 30 inch opening. I know that the wall is load bearing so I am going to put in a beam for the load. My question is I have a perpendicular door frame in that 10 inch pole. How would I fasten the header of the door frame to my new header beam so I have no posts?

Yes you are correct. The 2nd picture is the back side. I want to eliminate the entire post but I am not sure how to frame out the back side opening. I can best describe it as a "T" The top of the "T" is my load bearing wall and the downstroke of the "T" is the third wall. How do I attach this third wall to my new load bearing beam? The third wall is not load bearing.

Your engineer will specify the dimensional or engineered lumber used for the support beam replacing the headers.
In the photo the *third* wall connection is the where the red arrow points ? If so, it's a simple fastening connection and the engineer will specify what is appropriate. Should be fairly straight forward since it's more of terminating a cripple wall.
That is if I understand what you're trying to accomplish.
