Drywall over old plaster ceiling
I have a house built in 1951 and the old plaster ceiling is sagging and wavey.i want to put up new drywall over old ceiling by using 2x3 furring instead of tearing down old ceiling.there is no poly vapor barrier in between old ceiling and joices.but what they did was cut strips of plaster drywall and laid them in between the joices( so like having too ceilings already.i have R40 insulation in attic and all my plumbing and ducting go thru my attic as well(house was built on cement pad and concrete block walls)should I put a poly vapor barrier on the old ceiling first before I fur it or fur it first then the the poly then new drywall?

I'll start by asking what kind of lumber do you have for the ceiling joists? You already have the equivalent of 2 ceilings up there and more insulation than most which is why things are sagging. Then you will add the weight of furring strips and another ceiling?...That may spell disaster. Furring strips will not assist in pulling the sag out of a plaster ceiling.

The joices are fur..I removed all the old sawdust and batting and blown in insulation first ( 1800sq foot house, must have been at least a 2000 or more pounds of weight taken out)so I could bring the wiring up to grade. Then I put in new batting R40. I took out living/dining room wall and dining/kitchen wall to open it all up.But now you can really notice all the waves in the ceiling. So I will just fur out the old ceiling and shim were needed to bring it all to level.so basically a form of a drop ceiling.some one told me to put poly up first the the furring, then some one else says put it up between the furring and new drywall.
