I'm taking down the old lath and plaster walls in my hallway and putting in new drywall. There is a small 3'x6' door that i guess was used to access a section of the cinder block chimney for an interior wood furnace in the basement. I want to put drywall over the old doorway but i wasn't sure if i needed to put anything between the chimney and the drywall. Any help is welcomed.

Drywall should never be installed directly to masonry! Usually either furring strips are installed to attach the drywall to or a stud wall is erected in front of the masonry wall.
