Do you plan to cover existing dry wall with another layer. of dry wall? If you have never done any dry wall before, I would watch some youtube videos. Electrical switches, outlets, light fixtures & doors all have to be considered. Spackle & taping is a job in itself.

Normally the ceiling is done first so the top of the drywall on the walls will help hold up the ceiling drywall BUT you can still do the ceiling last. As Pulpo said, watch some videos to familiarize your self with the hanging and finishing process. None of it is over complicated. The biggest mistake novices make is to apply too much joint compound. It's better to apply extra coats of mud than have to sand off a bunch of excess!
If you are laminating the drywall over an existing ceiling you need to make sure the screws are long enough to penetrate the existing ceiling and secure the drywall to the ceiling joists.
