I'm not sure when these were installed. They can be removed without disrupting them, really. But I just want to be the safe and sane side.

This in a hallway that is about 14' by 3'. And there is another 5' before the bathroom.

I don't know if they contain asbestos or not but asbestos is only dangerous when it dry powdery form [where you can breathe the dust] so as long as you don't break them while removing there is no danger what so ever. Normally any asbestos health dangers is related to years of working around the stuff.

Only way to know for sure is to have them tested.
If it was my job I just wear a dust mask and remove them.
Anytime I see that done to an old house it was likely done because the old plaster keys where failing and they decided to just cover it up instead of fixing it despite the fact it ruined the whole look of the house.

Yeah, that is exactly what they did. There are some plaster spots missing from the lath. We're just going to sheetrock over it.

If the plaster is loose you would be better off removing it for lots of reasons.
Going to make some dust but worth it.
Have a cheap box fan blowing out, seal off the area and any HVAC vents.
I cut the inside corners with a 4-1/2" grinder with a diamond blade.
Pad the area over the lath where the joist are with plywood strips so the new drywall comes out even with the old plaster.
Use blue tape on the walls to mark where the rafters are.
