Insulate our interior florida room ceiling

We purchased an old manufactured home and have completely redone it. We enclosed the side porch with new windows, insulated the walls and installed A/C. However, we have significant heat loss in the ceiling. We had a roofer looking for options because of the pan roof currently installed. He recommended that we insulate from the interior of the roof, as we've done what we can to the outside. We've only have two inches to work with above all the windows. We'd checked out Styrofoam insulation, but it is silver backed - not what we want for a finished look. This room gets the hot afternoon sun in central Florida.

Anyone have any suggestions?

Welcome to the forums! With only 2" to work with, spray foam is about all I can think of that will semi-insulate a roof that was not meant to be insulated. What is the pitch of the roof?
