Interior wall before drywall?
Is there a way to put up an interior wall of studs (not load bearing) before the drywall is on the ceiling? Eg if the wall is in between 2 joists, where do you put the header?

Sure. You put blocking up between the joists (usually 24" on center) and attach the top plate for the new wall to the blocking.

Geez, glad you asked because I'm left to think that you would simply have attached the wall to nothing but drywall so please follow X's advice.

Say the ceiling had been there a long time without blocking. You have to cut out the drywall and install blocking to attach the top plate to?
in my house the old top plates were just screwed into strapping

The top plate has to be secured to something .... and if that means removing some drywall to add that blocking - that's what you do. What is above the proposed wall? attic? or finished floor?
