How much of shim needed for Drywall

How much of shim needed for Drywall
I have 2 questions.
#1 I am putting in a new ceiling in an old house that a room was added on to. The 2 old ceilings were paneling and were about 1.5" higher in the center where the rooms met than on the ends. So in order to make it flat with 1/2" drywall, on 16" center, I need a lot of shimming. How much of the Joists must be shimmed? I am using 5 screws in each joist. I have 5 stacks of shims about 3-4" long in each screw location on the joists. Anyone have experience like this? The drywall sheet will have limited contact on the back side. Just where the shim stacks.
#2 Also due to the unevenness of the rough cut joists, some of the stacks are not perfect and up to 1/8" out. How much of an offset can drywall compensate for for unevenness

Welcome to the forums!
It would be better to add strapping and fur it out as needed to give you level framing to attach the drywall to. The strapping gets installed perpendicular to the ceiling joists, shimmed as needed.

And if you do as marksr suggested, add a tiny piece of blue painters tape to the wall to mark the center of the straps to make it easier to find them when screwing.
Use screws, not nails, to make it easier to make adjustments to get it flat.
