to plaster or not to plaster

I have old lat and plaster walls. They have only been wallpapered once with vinyl, so they are reasonably clean. They are a bit gritty, though. I want to paint them. I've removed all the wallpaper. What should be my next step? Should I put a skim coat of plaster on the entire wall, or just start out with spackling the holes and sand? Or is there something else I should try.

If the plaster is free of cracks then just touch up the holes. You can sand the gritty stuff left from the wallpaper. It should paint great.
