water heater help

The cold water pipe is leaking. shut off the water at the water heater and the house and when I try to unscrew the fittings, a bit of water sprays out. is this residual water from the pipe? I ran the faucets, should I leave one open?

I don't want to remove the pipe if the water is going to gush and not stop.
advice appreciated

Unless you bleed off the pressure and some water, there will be leakage. But most fittings are soldered on and you cannot simply tighten the nuts, you have to unsolder or cut the pipe. Unless you have those flex type connectors.
