How do you change a thermocouple

My pilot light on my water heater keeps going out and I believe I need to change the thermocouple, but am not sure how to go about that.

We need a shower! Can you help please?

It is an AO Smith Promax GCV 40 100

When you light the pilot light does it go out immediately upon releasing the pilot button? If no, then your thermocouple is probably not the problem.

How old is this water heater? If it is after 2003 (I think) it is probably an FVIR model. Do you light the pilot by pressing an iginter button like on a gas barbecue while holding the pilot button or knob? If it is anFVIR heater have you properly cleaned the air intake as described in the owner's manual?
