New hot water heater making spitting noise

Just had a new Rheem gas 40 gal water heater installed. Plumber had to come back because one of the supply joints was leaking water on top, water everywhere.

Leak is fixed, water heater is warming up, now I hear a spitting noise. It sounds like drops of water hitting something hot and sizzling.

Could this be from the water heater getting water all over the top, will it stop? Or is something broken and leaking inside?

You're most likely hearing the water dripping on the burners. I would give it a day or so to burn off any residual water and see if it's still doing it. It's not surprising to hear after a new installation, especially when there's some leaking.

Sometimes when a new or existing tank is filled with cold water and turned back on the burning gases that flow up the chimney will condense and drip down the flue pipe in the center of the tank and make that noise you hear when they hit a hot object. Once the water heats up that sound should go away.
