To freeze broccoli, do not cook it first. What you will do is blanch it. To do this, steam the broccoli on the stove for 5 minutes, just enough to begin changing its color. Remove it from the steamer and let it cool completely. Seal it in a plastic bag and put it in the freezer. It will last nearly a year in this manner.
