If the caulk between your ceramic counter tile starts to turn yellow, you can replace it or you can caulk over the top of it. If you want to remove it, you should be able to scrape it out with a knife, screwdriver or other sharp tool. Once you take it out, you can apply another bead of caulk in the same spot. If you want to go over the top of it, you can simply get some more caulk and use your caulk gun to go right over the top of the existing material.
